Fiesta Chicken Potato Bake

1 package Southwestern Shredded Potatoes

8 ounces Sour Cream

4 Chicken Breasts (raw)

1 package Taco Seasoning (McCormick)

12 ounces Salsa (Pace)

2 cups grated Cheese (Mexican 4 blend)

(Cooking spray for pan - Pam)

Optional: Diced Avocado Sliced Green Onions 

Preheat oven to 350 degrees. Spray a 9 x 13 baking pan with cooking spray. Mix together the potatoes and sour cream, place in pan. Cut chicken breasts into cubes - toss with half the package of taco seasoning. Spread chicken cubes over potato mixture. Cover with foil and bake for 45 minutes Remove pan from oven and remove foil. Cover the mixture first with salsa then with cheese. Return to oven, cook until nice and bubbly!  Remove from oven. Let it set for 5-10 minutes before serving. May be served with avocado and green onions.
